Delicious Low Carb

So, I have been vigilant with my carbohydrate consumption for about 3 months now. The benefits have been numerous, but this isn’t about that. It’s about finding foods that taste good and are lower in carbohydrates.

I have used Pinterest for tracking recipes that I like. It’s been an inspiration for many of the foods I serve at parties, take as side dishes, and cook almost every day. With the focus on low carb, I’ve been looking for meals that are tasty without my beloved pasta and breads. It’s been difficult.

However, it’s not impossible. I’ve created a grouping of foods that I’ve found over the past 4 years that are Low Carb – Interesting Recipes. Of course, the Interesting Recipes list still contains all of those entertaining dishes. [The links go to my Pinterest lists]

The meatloaf you see in the photo was inspired by the low carb recipes. I used a bunch of stuff I had in the fridge and pantry to create it. Let me know if you like this recipe. Mom and I enjoyed it greatly. Note: use a lower fat ground beef to reduce the drippings as I don’t use a ton of breadcrumbs to capture it.

Massive Meatloaf

This meatloaf is huge, plan for a crowd or lots of left overs

Equipment

  • 4 quart bowl
  • 7 x 11 glass baking dish, greased – I use a non-stick spray
  • Wax Paper for rolling the loaf

Ingredients

Dry Ingredients

  • ½ cup bread crumbs
  • 2 tbsp italian seasoning
  • 1 tsp black pepper
  • 1 tsp salt

Wet Ingredients

  • 2 eggs
  • 2 pound ground beef
  • 1 cup onion sweet, chopped
  • 2 cups mushrooms chopped
  • 1 can tomato paste
  • 8 oz cheddar cheese sharp is best, grated

Topping

  • 4 oz cheddar cheese sharp is best, grated

Instructions

  • Preheat oven to 350°
  • Combine Dry Ingredients in bowl
  • Mix eggs into dry ingredients with a fork. It needs to be well mixed
  • Add Wet Ingredients to bowl
  • Wash your hands and combine wet and dry ingredient by hand. You don't want to over mix this or you'll have a compressed loaf. But, if you don't combine enough, your loaf will fall apart.
  • Turn mixture to a sheet of wax paper and form a roll that fits in your baking dish.
  • Put loaf (excluding wax paper) in the baking dish
  • Bake for approximately 1 hour until internal temperature is 155
  • Remove from oven and let rest until internal temperature is 160 or higher

  1. We got three meals from this one. It was very tasty. Next time, I’ll use a bit more salt and pepper in the recipe. I’ll update the recipe with new measurements.
