Curtis, my neighbor and smoker buddy, celebrated his birth-aversary yesterday. He brought a ~9 pound shoulder and asked if I’d smoke it. SURE!
My Yoder Smoker is wrapped in the Yoder Thermal Jacket and maintains temperature even when the outside world is freezing or windy. It was 26 degrees for most of the night.
Started this wonderful roast at 10:30pm. It was rubbed with my Smoking Roast Rub (see the recipe below). The smoke at 10am had coated the roast nicely. It’s at 169 in this photo, and heading to 185 for slicing.
Smoking Roast Rub
A slightly sweet dry rub for pork and poultry. This blend is enough for about three 10 pound roasts.

Ingredients
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 1/2 cup Paprika
- 1/3 cup Granulated Garlic
- 1/4 cup Salt
- 1 tbsp Chili Powder
- 1 tsp Cayenne Pepper
- 2 tsp Ground Black Pepper
- 1 tsp Oregeno
- 1 tsp Cumin
Instructions
- Combine all ingredient in an airtight container. Shake until well mixed.
- Apply liberally to meat before smoking.
