Easter Dinner on Wednesday?

Sunday was running way behind, so the Prime Rib didn’t make it to the oven. Monday and Tuesday ran long as well. On Wednesday, u opted to use the delay bake feature, and I put the beast in the oven at 8am with a plan to eat at 5pm. It worked!

The rub is simple: 2 parts salt, 2 parts pepper, 1 part dried garlic, 1 part dried onion, and 1 part paprika. Throw it in a spice grinder until smooth. Oil the beast and lather in rub. 250 forever until 130 in the middle.

I served it with a mash that was similar to a recipe in the NYT last week. My recipe is below.

Ingredients

  • 2 medium Russet Potatoes washed and cubed for boiling
  • 2 sticks butter
  • 1/4 cup sour cream
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Boil Potatoes until tender
  • Drain potatoes – pass through a ricer if you peeled the potatoes – otherwise mash as usual
  • Slowly whisk in the butter one tablespoon at a time
  • Add sour cream, salt, and pepper – whip till smooth
  • Serve while still hot
